6 crushed nails

2 meters of dried sausage casing

STEP-BY-STEP ELABORATION

· Remove all the seeds from the ancho and guajillo chiles, leave them soaking for half an hour in a container with hot water.

  • Drain the chilies and place them in a blender along with the garlic and vinegar and process until smooth.
  • Tome la carne y la grasa de cerdo, colóquela en un recipiente de vidrio, agréguele todas las especias junto a la mezcla que acaba de preparar y mezcle con las manos o con una cuchara hasta integrar.
  • Cover the container with plastic wrap and let the meat marinate in the refrigerator for at least 8 hours.
  • Now you must carry out the sausage process, to do this, one hour before removing the meat from the refrigerator, place the casings in a container with hot water to remove excess salt and soften them.
  • When they are ready, cut a piece of casing 50 cm long, tie a knot at one end, take the meat out of the refrigerator and fill the casing with the help of a funnel.
  • When it is full, tie the other end and tie in the middle to form cholomeños sausages about 8 or 10 cm long. Repeat this with the rest of the meat.
  • When you have the chorizos ready, hang them in a cool area, cover them if necessary, and let them cure overnight.
  • Once all this is done, all that remains is to take these cholomeños chorizos, roast them to your liking and enjoy it with corn tortillas, beans, white rice, grilled meat or whatever you want to accompany this Honduran delicacy.
